- 1 lb round steak one inch thick
- Flour
- Pepper
- Salt
- Lard, Shortening, or bacon drippings for frying
- Cut the steak into portions of desired size.
- Pound well with a wooden mallet.
- Sprinkle liberally with pepper and salt, dip in flour.
- Let stand a few minutes while fat is heating over medium heat.
- The meat will be damp on the outside; dip again in the flour and rub well into meat.
- When fat is very hot, drop the steak in and fry carefully until golden brown all over.
- Reduce heat and finish cooking to any stage desired; rare, medium, or well done.
Variation: Fry in ½ fat and ½ olive oil. Add other spices to taste, if desired.
