Seven Minute Frosting

Seven Minute Frosting

  • 2 egg whites 
  • 6 Tbsp cold water 
  • 1 1/2 cups sugar 
  • 1/2 tsp cream of tartar 
  • 1 1/2 tsp pure vanilla extract
  • Pinch salt 

  1. In stainless steel bowl, combine egg whites, cold water, sugar, and cream of tartar in the top of double boiler. Whisk until smooth. 
  2. Place over rapidly boiling water, beating constantly with rotary egg beater and cook 7 minutes or until frosting will stand in peaks
  3. Remove from the heat and whisk in vanilla. Let cool, whisk often. 



Chocolate Seven Minute Frosting

  • 2 egg whites, unbeaten 
  • 1 1/2 cups sugar 
  • 5 Tbsp water 
  • 1 1/2 tsp light corn syrup
  • 1 tsp vanilla 
  • 3 squares Unsweetened Chocolate

  1. Melt chocolate over low heat. Combine egg whites, sugar, water and corn syrup in top of a double boiler, beating with rotary egg beater until thoroughly mixed. 
  2. Place over rapidly boiling water, beating constantly with rotary egg beater and cook 7 minutes or until frosting will stand in peaks. 
  3. Remove from boiling water; add melted chocolate and vanilla; beat until thick enough to spread. 

Variation: fold in chopped nut meats or coconut. 


Lemon Seven Minute Frosting

  • 3 egg whites, unbeaten 
  • 2 1/4 cups sugar 
  • 6 Tbsp water 
  • 1 Tbsp light corn syrup 
  • 2 tsp lemon juice

  1. Combine egg whites, sugar, water and corn syrup in top of a double boiler, beating with rotary egg beater until thoroughly mixed. 
  2. Place over rapidly boiling water, beating constantly with rotary egg beater and cook 7 minutes or until frosting will stand in peaks. 
  3. Remove from boiling water; add lemon juice; beat until thick enough to spread.
