- 2 egg whites
- 6 Tbsp cold water
- 1 1/2 cups sugar
- 1/2 tsp cream of tartar
- 1 1/2 tsp pure vanilla extract
- Pinch salt
- In stainless steel bowl, combine egg whites, cold water, sugar, and cream of tartar in the top of double boiler. Whisk until smooth.
- Place over rapidly boiling water, beating constantly with rotary egg beater and cook 7 minutes or until frosting will stand in peaks
- Remove from the heat and whisk in vanilla. Let cool, whisk often.
Chocolate Seven Minute Frosting
- 2 egg whites, unbeaten
- 1 1/2 cups sugar
- 5 Tbsp water
- 1 1/2 tsp light corn syrup
- 1 tsp vanilla
- 3 squares Unsweetened Chocolate
- Melt chocolate over low heat. Combine egg whites, sugar, water and corn syrup in top of a double boiler, beating with rotary egg beater until thoroughly mixed.
- Place over rapidly boiling water, beating constantly with rotary egg beater and cook 7 minutes or until frosting will stand in peaks.
- Remove from boiling water; add melted chocolate and vanilla; beat until thick enough to spread.
Variation: fold in chopped nut meats or coconut.
Lemon Seven Minute Frosting
- 3 egg whites, unbeaten
- 2 1/4 cups sugar
- 6 Tbsp water
- 1 Tbsp light corn syrup
- 2 tsp lemon juice
- Combine egg whites, sugar, water and corn syrup in top of a double boiler, beating with rotary egg beater until thoroughly mixed.
- Place over rapidly boiling water, beating constantly with rotary egg beater and cook 7 minutes or until frosting will stand in peaks.
- Remove from boiling water; add lemon juice; beat until thick enough to spread.
